Carbonara
Carbonara is a traditional Italian pasta dish from Rome, famous for its creamy, rich and deeply savoury sauce.
It relies on the heat of the cooked pasta to turn the eggs and the cheese into a silky sauce, with no cream at all.

Ingrédients
  

  • pasta
  • guanciale or pancetta
  • Parmesan
  • Pecorino
  • 1 whole egg
  • 2 egg yolks
  • black pepper

Instructions
 

  • Cook the pasta.
  • Meanwhile, cut the cured pork into small cubes.
  • Crack a whole egg into a bowl and add two egg yolks. Season generously with pepper. Mix.
  • Add the cheeses to the same bowl and mix.
  • Set aside a glass of the pasta cooking water, then drain the pasta.
  • In a pan over medium heat (4 out of 10), fry the cubes of cured pork
  • Add the pasta to the pan with a little of the cooking water and toss together.
  • Take the pan off the heat and pour in the eggs.
  • Toss and serve.
