Crispy Fried Tofu
Fried tofu is a staple across many Asian kitchens, from Chinese to Japanese and Thai. The tofu is fried until the outside turns golden and crisp while the inside stays soft.

- 1 block of firm tofu
- Bell peppers
- Cabbage
- Cornflour
- Salt and pepper
- Oil
- 2 eggs, beaten
Boil the tofu cubes for 2 minutes in boiling water.
Cut the peppers while that is happening.
Rinse the tofu cubes under cold water and drain them (pat dry with kitchen paper).You want to remove as much water as possible so nothing spits when the water meets the hot oil. One bowl with two beaten eggs, another bowl with cornflour.
Dip the tofu in the egg, then in the cornflour.
Heat the oil to 180°C.
Fry the tofu in several batchesuntil golden brown Set aside.
Stir-fry the peppers.
Add the tofu back in.
Serve.
