Donuts
Donuts are sweet ring or disc-shaped pastries, usually deep-fried. They are often coated in glaze or sugar and can be filled in all sorts of ways: cream, jam, chocolate and more.
They are typically made from a yeasted dough of flour, eggs, sugar, milk and yeast. Once fried, donuts can be finished with all kinds of toppings: chocolate glaze, icing sugar, sprinkles, or a cinnamon sugar coating.
Popular in North America but well loved elsewhere too, they are closely tied to American culture through famous chains such as Dunkin' Donuts and Krispy Kreme.

Ingrédients
  

Donut dough

  • 280 g flour
  • 40 g sugar
  • 1/2 tsp salt
  • 1 egg
  • 120 g warm milk
  • 40 g melted butter
  • 7 g yeast
  • Nutmeg

Glaze

  • 250 g caster sugar
  • 75 g butter
  • 4 tbsp milk
  • 1 tsp vanilla extract

Instructions
 

Donut dough

  • Put the flour in a bowl with a little nutmeg.
  • Add the sugar and the salt.
  • In another bowl, pour in the milk, the egg and the melted butter. Mix.
  • Pour the liquid into the flour. A stand mixer is recommended here. High speed for 3 minutes.
  • Mix. The sticky texture is normal, do not add extra flour.
  • Work the dough for 5 minutes, pressing it down and folding it back on itself until it turns elastic. Lightly oil the work surface.
  • Set the dough aside, cover with cling film and leave it to rise for 1 hour.
    It should double in volume.
  • Flatten the dough with a rolling pin to knock out the air bubbles.
  • Heat the oil to 160°C.

Glaze

  • In a bowl, add all the ingredients and mix.
  • Dip the donut into the glaze.
  • Leave to set on a wire rack.
