Rougail Saucisses
Rougail saucisses is a traditional dish from Réunion, full of spiced flavour. It is made of smoked or fresh sausages, cut into pieces and simmered in a sauce of tomato, onion, garlic and ginger. Chilli and spices such as turmeric add a hot, exotic note. Rougail is usually served with white rice, lentils or butter beans, and sometimes a little combava zest for a unique tangy edge. A comforting dish with real character.

- 4 Morteau sausages
- 1 onion, sliced
- 2 garlic cloves, sliced
- 4 tomatoes
- Thyme and turmeric
- Sliced ginger
Blanch the sausages in boiling water for 10 minutes, then cut them into diagonal slices.
In a pan, colour the onions.
Add the garlic, the ginger and the chopped tomatoes.
Reduce the tomatoes.
Add the sliced sausages.
Add the thyme and the turmeric with half a glass of water.
Cover and cook for 30 minutes.
It is done when the sauce has thickened.
Serve with rice.
