Tian
Tian is a traditional Provençal dish, usually made with seasonal vegetables slow-roasted in the oven. It takes its name from the earthenware dish it is baked in, called a tian in Provence.
A classic tian uses vegetables such as courgettes, tomatoes, aubergines and onions, thinly sliced and arranged in layers or stood upright in the dish. They are drizzled with olive oil, seasoned with herbes de Provence (thyme, rosemary, basil) and sometimes topped with cheese or breadcrumbs. The slow bake concentrates the flavours, giving a simple but delicious dish that is typical of Mediterranean cooking.

  • aubergines
  • courgettes
  • tomatoes
  • red onions
  • garlic
  • mozzarella
  • herbes de Provence
  • olive oil
  • any other vegetables you like

Instructions
 

  • Slice the vegetables into rounds.
  • Grease a gratin dish with a little olive oil.
  • Arrange the vegetables in the dish, alternating them as you go.
  • Scatter herbes de Provence over the top and finish with a drizzle of olive oil.
  • Bake at 180°C for about thirty minutes.
