Tuna, Egg and Cheese Briks

The brik is a speciality of North Africa, and of Tunisia in particular. It is a very thin, crisp sheet of pastry (called brik pastry) filled with various ingredients, then folded, often into a triangle, before being fried or baked.

  • brik pastry sheets
  • 2 tins tuna
  • cheese (Emmental)
  • 2 eggs

Method

  • Making the filling is very simple: mix the tuna, eggs and cheese together in a bowl.

  • Heat a pan with a little olive oil, then fry the briks for 2 minutes on each side until golden

Notes

I served my briks with a little baba ganoush (it is like hummus but made with aubergine instead of chickpeas) that I had made the day before.
