Palak Paneer

Palak paneer is a traditional Indian vegetarian dish made with spinach (palak) and paneer, a fresh Indian cheese. It is hugely popular in northern Indian cooking.
Palak paneer is usually served with Indian breads such as naan or chapati, or with basmati rice. It is a deeply flavourful dish, both creamy and lightly spiced, with the mildness of the paneer balancing the tang and slight bitterness of the spinach.

Ingredients

  • 400 g spinach
  • ghee I used butter instead
  • 1 tbsp cumin
  • 1 tsp turmeric
  • 1 tsp garam masala
  • 100 g tomato passata
  • butter
  • 4 cloves garlic finely chopped
  • 1/2 onion finely chopped
  • 1 tbsp fromage blanc or similar I used Philadelphia here
  • paneer or similar I used feta here
  • 1 tbsp flour

Method

  • Blanch the spinach.
  • Then plunge it into iced water.
  • Blend it to a puree.
  • Set aside.
  • In a pan, melt some butter with a tablespoon of cumin.
  • Add the chopped garlic and onion and cook until golden.
  • Add the turmeric.
  • Add the tomato passata.
  • Add the fromage blanc.
  • Add the spinach puree.
  • Add the garam masala.
  • Add the tablespoon of flour and the paneer.
  • Stir together.
  • Let it simmer for 5 minutes and serve.
